Reber – who are we?

Family-owned for more than 145 years, the company is known primarily for its high-quality confectionery, not least its Mozart chocolate-coated balls – Genuine Reber Mozart-Kugeln® – which are filled with premium pistachio marzipan made from fresh green pistachios, almonds and hazelnut nougat, and covered in a delicate layer of chocolate praline.

Product range

Our quality standards

Nougat
We exclusively use genuine, top-quality Levantine hazelnuts to produce our nougat. These hazelnuts are larger than other varieties. With a calibration of 13/15 instead of 9/11, we use larger hazelnuts that are both more expensive and higher in quality. They contain a higher concentration of nut oil, making them much more aromatic and fuller in flavour. Unlike our competitors, we do not use hazelnut paste in our nougat. Our nougat – which has an extremely high hazelnut content at 49% – is FRESHLY roasted shortly after processing, and is only stored for a limited time prior to use. The quality of the nougat in products made by our competitors is not as high, with the hazelnut content usually 10% lower. Our products have the highest nougat content in the chocolate industry.

Gourmet marzipan
All of our premium marzipan products meet the legal requirements for gourmet marzipan (i.e. the raw marzipan mixture does not consist of more than 30% sugar) and are made exclusively with Californian almonds, meaning there are virtually no bitter almonds in the mixture. This enables us to add bitter almonds to alter the flavour of the marzipan as required. The almonds used in our recipes are sorted electronically three times and then once more manually by two employees. The raw marzipan mixture is finely rolled using granite rollers as per the original ‘Lübeck method’ and then roasted in open copper pots. In contrast to other methods, it takes longer to roast the marzipan, and the catalytic effect of the copper imbues the mixture with toasted notes that are much richer overall.

Chocolate
Our chocolate has been made according to the same exact recipe we have been using for decades. The dark chocolate is 60% cocoa, while the milk chocolate is 35% cocoa. This mix of cocoa varieties from selected regions is what gives our products their unique taste, and guarantees that they will always provide exactly the same level of quality.

Dairy products
We source all of our dairy products – including real butter, cream and yoghurt – from local dairies, meaning we use milk from genuine alpine cows. Reber also uses real natural honey, vanilla and candied orange peel. We do not use any artificial flavourings, flavour enhancers, added fats or other chemical additives or manipulated ingredients.

This year, DLG (Deutsche Landwirtschafts-Gesellschaft e.V.) awarded Reber’s speciality goods full points in its ranking of the top quality confectionery products in Germany. Reber’s famous chocolate-coated balls – Genuine Reber Mozart-Kugeln® – were awarded the gold prize by DLG. The product achieved the best possible score for all five quality criteria. This success complements the excellent feedback received from a recently conducted customer survey, in which customers confirmed that the Reber brand is synonymous with top quality and sells products considered to be ‘genuine’. The respondents associate Reber’s specialist products with a pure, natural taste. We are extremely pleased to have our efforts recognised in this way. The award from DLG serves as official confirmation of our dedication to providing top-quality products. Reber has a sterling reputation as a brand that uses the best ingredients.
